Make the dukkah: In a large, dry skillet over medium-high heat, combine the hazelnuts and almonds and toast until fragrant, 1 to 2 minutes. Add the pumpkin seeds, sesame seeds, pepper, coriander, cumin, salt and cinnamon, and toast until the sesame seeds are lightly browned, about 1 minute. Transfer the mixture to a shallow bowl and let cool.
