The gulf between urban and rural Coloradans is widening in a battle over livestock

It was MeatOut Day, designated by Colorado’s Democratic governor, Jared Polis, as one when Coloradans should call attention to greenhouse gases by abstaining from eating meat. My friend had the opposite in mind. Unsurprisingly, in a state with nearly 40,000 farms and ranches, many groups responded with a Meat In Day. Here in Montezuma County, where 26,183 people and a like number of cattle are scattered over an area the size of Delaware, the Meat In response was enthusiastic. Shiloh Steak House in Cortez had a line out the door.
